Blueberry Muffins

This morning we made some mini blueberry muffins from fresh blueberries!  Yummy!

3 tbsp. butter
2/3 cup sugar
1 egg, beaten
1/2 cup milk
1 1/2 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 1/2 cups fresh blueberries
Cream together butter, sugar. Beat in egg. Add milk.
Whisk together flour, baking powder and salt.
Fold in blueberries. Pour batter into greased muffin pan (12 regular muffins or 36 mini muffins).
Bake in a preheated 350° oven for approximately 25 minutes (or 15 minutes for mini muffins).

I sprinkled brown sugar on top of some of the muffins because Matt likes them that way - the rest are plain for Joseph!
