Banana Bread

I baked a loaf of banana bread this morning - made just the way that my hubby likes it - sprinkled with brown sugar on top.  Here is my recipe:

1/3 cup shortening
1/2 cup sugar
2 eggs (from our chickens - thanks girls!)
1 3/4 cup flour
2 t. baking powder
1/2 t. salt
1/4 t. baking soda
1 cup mashed, ripe bananas (about three bananas)
sprinkle of brown sugar

Cream shortening and sugar.  Add eggs and mix well.  Add dry ingredients and mashed banana and mix well.  Pour into well-greased loaf pan.  Sprinkle top with brown sugar.  Bake at 350 degrees for 1 hour.  Enjoy!
